Vegan Red Velvet Twinkies
Happy Labor Day Weekend. After three consecutive, 14-hour work days, I rewarded myself with a 48 hour vacation. I labored the entire long weekend away baking 2000+ pastries. It was so nice this morning to leisurely sip my coffee and scour the internet for [anything except baked goods] recipes to veganize.
I love baking and eating any baked goods, but these Twinkies have usurped my freedom. I haven't had a dinner party in weeks, and I'm really excited to prepare an enjoyable feast with my friends.
I was really flattered on Friday when I received a message from a woman looking for a specialty Vegan Twinkie or Red Velvet cake for her friend's birthday. After some brain stormage, I was able to devise a pan that baked a GIGANTIC Vegan Twinkie, and even had some batter left to make a few Red Velvet Twinkies to thank her. She was also secretly my guinea pig. Well, I guess it's not a secret now.
They looked like little red bakery box garnishes next to the giant Twinkie cake - like a dessert side dish. Now that I'm thinking about it, why don't desserts have side dishes? It's definitely an untapped gold mine of a market.
