Vegan Christmas - Part 2: Vegan Belgian Waffles

Growing up, morning's in my house were less than sensational. My little sister and I had our fair share of different idiosyncratic qualities and neuroses that always spiced life up a bit. A typical AM before elementary school usually involved one of the following:

A) My father and I getting into an argument when my 8-year-old self refused to brush the back of my hair. I would brush the front and sides, leaving the back in a knotted, froed, cow-licked mess...and I didn't give two shits.

B) My mother bribing my little sister with either an M&M or a dime to use the bathroom before she hopped on the bus, because she firmly refused to use the bathroom at school. She would rather come home whining with stomach cramps before risking certain embarrassment in the Akiva Academy little girl's room. I still fondly remember the gum-ball machine full of dimes on her dresser that she probably cashed in for the hot new Polly Pocket in 1992.

C) The Sunday morning screaming face-off of parents vs daughters because we could not bear another week of Sunday School. It was hell, I tell ya.

I can look back and laugh at many of my childhood quirks, but not this one. Mom and Dad, if you read my blog, Sunday School at Rodef Sholom was the equivalent of being forcefully subjected to 1,000 nails scratching chalkboards while chained to a cage in Death Valley. You still couldn't pay me to go. Several times, my dad had to pull me from the back seat of the car while I gripped the seat cushion so deeply that I left scratch marks.

Enough of this negative reflection. 

We definitely had our share of joyous early risings...especially if mom was making breakfast. For years, her specialty was French Toast. She knew just the right combination of batter, bread and frying time. Then, for one of my parent's anniversaries, my dad bought her a professional waffle maker. Unfortunately for me, I'd already moved 3,000 miles away from Ohio to LA. 

Now that they've moved 2700 miles closer, I finally got my chance to have my way with that waffle maker. We made hot, sweet love all Christmas morning. I walked out of the kitchen sweaty and satisfied. Much more pleasant than a Sunday School mornings, indeed.

Cannot wait to make these. You make me want to unpack my waffle iron, and I will as soon as I deal with this sink issue and a few of the other hazards of moving 2000 miles. I am sure my husband will love them. Bless your soul and happy new year. ~Brenaya

I laughed so hard at your sunday school story! That was the same at my house.... I hated church. Even if they had me at gun point, my parents couldn't make me go again. I also laughed out loud at the thought of you making hot, sweet love to the waffle iron. You're so funny!

Dear Jenn:
Thank you for responding regarding vital wheat gluten. From your posts, it looked to me as if Arrow Mills just calls the product vital wheat gluten and Bob's brand identifies the same as vital wheat gluten flour. If you have used both, and they both work the same then it sounds like as far as marketing and packaging are concerned they we're okay. Technically, I understand there is a difference, but it looks like the easy to access products on the shelf are all the flour regardless of subtle packaging differences. I just purchased some of Bob's the other day for the first time, and I am rather excited (and focused) on it as you can tell. I don't know what took me so long.

I am keeping my vital wheat gluten flour in the refrigerator because that is what I do with all my wheat flours. Do you think this is silly?

Well as a Belgian, I really should give them a try. But I don't have a waffle iron. After seeing this now I really wan't to have one.
